Unique Espadin/Papalometl blended mezcal

The Mezcal Ànimas Espadin/Papalometl Joven is produced by mezcaleros Luis and Humberto Juan in Santiago Matatlán, Oaxaca using maguey Papalometl (agave Cupreata) and Espadin Agave.
They harvest the agaves and cook them in a Horno di Pierdra – a conical ground oven. The cooked agave is milled with a tahona, fermented in wooden vats, and double distilled in copper pot stills. Espadin is a common agave variety to be used for mezcal but Papalometl is much rarerand takes some 8-12 years to mature.

It is not unusual to make mezcals which are blended, but it is an art making the different flavour profiles mix in a satifying manner.

Very sweet, with complex flavours an unusual depth to the taste of chocolate, mint and a hint of banana.

Description

This is certainly a mezcal for the sippers. With full-bodied and fruity aroma and a nice warm and sweet taste, this mezcal has a great appeal to the worshippers of aged whisky.
The “shaman like” figure on the label of the bottles of mezcal Ànimas has a story of its own. It is a poetic interpretation of the role of the mezcalero who draws out the spirit of the maguey. Wielding his magic, the mezcalero can liberate the essence of the agave and make it take physical shape as wonderful mezcal. If one looks a bit closer, one will see that the strange, demon like figure holds a rabbit in each arm.

The rabbits have a meaning as symbols for fertility in precolumbian culture. It is often associated with the aztec.
