The mezcals from “Memorable Mezcal” are all handcrafted and and the agaves are all handselected. It takes a lot of experience understanding when to harvest the agave. The plants natural lifecycle is to grow for 6-8 years and then bloom. The process of blooming will kill the plant leaving only the seeds. The agave is harvested right before it starts growing the quiote as the flower stalk is called. That is the time when the plant is ripe and full of juice. It is also a pretty short period, where the jimador has to use his experience to pick the plant at the optimal time.
This Espadin based mezcal holds all the good qualities of classic mezcal. It is strong, with a smoky sweetness and is absolutely perfect for a good dinner or as an evening sipper.
