La Medida Mezcal Tobalá
Mellow, dreamy & premium mezcal
Tobalá (agave potatorum) grows wildly at high altitudes, but unlike other agave species, it does not grow very big. It is a difficult plant to cultivate due to its
preference for mineral rich, rocky terrain. The “La Medida Mezcal Artesanal Joven Tobalá” is made by master mezcalero Pánfilo Hernadez and his son Francisco
Hernández. The “artisanal” in the title hints at the classic methods of elaboration.
La Medida uses earth ovens (horn de pierdra) for baking the agave. While the earth ovens are slow and takes lots of manpower to work, they do also produce a better product.
