Carefully selecting mature, 10-12 year old Espadin agaves from the town of Santa María Suchixtlan, Mezcalero Maestro Antonio Gallindo cuts each maguey into 4 quarters before baking underground in a woodfired, conical stone oven. After being well cooked and crushed, the juice is extracted – the resulting sweet liquid is left to rest and ferment in a pine vat for between 7 and 10 days, depending on the time of year, constantly being monitored by hearing, sight and taste. Once ready, it is distilled twice in a fire heated copper alembic still, which is where the hand of Antonio imparts its unique touch to create the unique flavor of a true Mexican espadin.
