Description
Maguey Tobala (agave potatorum) grows wildly at high altitudes, and its relatively minuscule size yields extremely limited quantities of intensely aromatic mezcal. It has a long growing period (12-15 years), before it reaches maturity. While other agaves grow “hijuelos”, the Tobala grows only from seeds.
The Tobalá has a very distinct taste with an intense aroma of grasses, apple and fruits. Tobalá, which is also sometimes called Papalometl, Biliá, Chato or Monte is expensive, and will probably always be expensive, because it has such a long growning period. Expensive – but deliscious!
